Sweet Potato Soup

 

Okay, this one takes a little more time, but it’s worth it!

Peel and cube 2 good sized sweet potatoes

boil in water until tender drain and set aside

quarter and heat 1 red bell pepper on stovetop until soft. Remove, let cool and dice it up

In a blender combine

sweet potatoes

diced red bell pepper

2 cups organic free range chicken broth

1 tsp finely grated garlic

1 1/2 teaspoon extra virgin olive oil

4 teaspoons red miso paste

sea salt to taste

Blend on High until smooth

Place in pan and heat. Serve (sprinkle with paprika for added seasoning)
